Oak aged ale fermented with saison yeast and brettanomyces and dry hopped with 100% mosaic hops. Dry saison with notes of lemon and grass, tangerine and grapefruit. Mild bitterness.
 
ABBAYE DE SAINT BON-CHIEN, ‘Swiss Ale de Garde’Limited Eddition 2013 jura, switzerland

This rare find has been aging in our cellar for three years. It is one of the flagship sour beers of the world. The initial fermentation occurs with wine yeast, the beer is then aged in old wine barrels for one year,                  which imparts tart sour notes of cherry, black currant and lemon.
 
HEIDRUN MEADERY‘Madras Carrot Blossom’ Mead,point reyes station, california

Heidrun focuses on mead made in the champagne method using a single flower variety. This brings out the honey’s natural floral nature.The Madras Carrot Blossom is dry and offers elegant notes of lavender & jasmine.
